They are then transported to the factory where the Cassia is hand cleaned, graded, and sorted. The spice is often confused with Ceylon Cinnamon which is the sweeter variety. Cassia is commonly referred to as ‘Dalchini’ in India. In India, Cassia is a more economically priced alternative to Ceylon Cinnamon (by a factor of 3) and is characterized by a much spicier note when compared with Ceylon Cinnamon. It is known to be an Indian kitchen staple and is very popular in Indian cooking.
